I guess since it is December 3rd, I shouldn’t be too upset that it’s snowing right? But I am. I’d like to live in this little perfect world where it doesn’t get below 30°F, where snow is nonexistent, and where I can walk around outside without a coat, hat or mittens. Le sigh. I can’t accept that it’s winter – not yet. It seems like just a couple weeks ago, summer was starting and I was out on the lake. Now… now, oh I can’t even think about it.
The plus side of of the w-word, is that Christmas is coming. Today I hung up our Christmas decorations and did some Christmas shopping. I only have a couple people left on my list – thanks to black friday 🙂
I’ve had a heck of a time coming up with a gift ideas for the parents in our lives. Doesn’t it always seem like they already have anything they could ever want? I’ve considered doing some cute crafty ideas, but I just never feel like it’d be enough. What do you get your parents or in-laws?
A while back, I mentioned a recipe from gold medal that most likely made your mouths water. I asked permission to share with our readers and guess what, they said yes!! Soooo, here we go. You might want to write this down (or pin it – hehe!)
Double-Chocolate Lava Cake
Recipe by Gold Medal
This recipe serves 9.
Ingredients:
1 cup Gold Medal white whole wheat flour
3/4 cup granulated sugar
2 tbsp unsweetened baking cocoa
2 tbsp baking powder
1/4 tsp salt
1/2 cup milk
3 tbsp butter/margarine (melted)
1 tsp vanilla
1 cup semisweet, bittersweet or milk chocolate chips (6 oz)
1/2 cup packed brown sugar
1/4 cup unsweetened baking cocoa
1-3/4 cups very hot water
Directions:
Heat oven to 350°F. In ungreased 9-inch square pan, mix flour, sugar, 2 tbsp cocoa, baking powder and salt. Stir in milk, butter, and vanilla with a fork until smooth (making sure to incorporate dry ingredients in corners of pan). Stir in chocolate chips. Spread batter in pan. Sprinkle with brown sugar and 1/4 cup cocoa. Pour hot water evenly over batter. Bake about 40 minutes or until top is dry. Cool 10 minutes. Spoon warm cake into dessert dishes, spoon sauce from pan onto each serving. Top with ice cream or nuts if desired.
