Have you ever just craved a hot sandwich on a cold day? I’m totally guilty. My go-to is usually a grilled cheese with tomato soup but that’s so basic a caveman could do it. I wanted to challenge myself and see what else I could create and so I threw together a few ingredients that I had and well… All I can say is, “Ummmm delicious!” Oh and it is soooooo easy!”
You may have all these ingredients in your fridge right now and if not, no need to go shopping, you can sub in whatever you have that seems like it might be a good fit! No Swiss? That’s okay, you can use cheddar, or mozzarella, or whatever! No spinach? Lettuce would work too! I’m all about using what you’ve got.
Anyways, without further ado, let’s get to this delicious recipe!
Mushroom & Swiss Spinach Pesto Panini
Ingredients:
Sourdough Bread
Pesto Spread
Sliced mushrooms
Swiss Cheese (or mozzarella or cheese of choice)
Spinach
Cooking Directions:
Step 1 – Spread pesto on each piece of bread
Step 2 – Lay down cheese, then mushrooms, then spinach
Step 3 – Grill on George Foreman Grill (or if you have a panini press like mine, they’re awesome!)
Step 4 – Enjoy the deliciousness!!!!
