The other night, both me and my husband had to work (I had to teach my class at the gym and he coaches baseball on the side) so by the time I got home to start dinner, I had about 40 minutes to cook, serve and eat. I’d planned on throwing some pork chops on the grill but I didn’t have the time, energy or desire really to cook a full-blown meal. I opened the freezer to see what other options it held and it jumped out at me, I had a couple boxes of Better Bakery artisan melts that I found at Walmart, which would be the perfect solution!
The oven was already preheating as I’d originally planned on doing potatoes, so it was super easy to unpackaged the melts and pop them in. I lined my baking sheet with tin foil too so that I wouldn’t have to do dishes afterwards 🙂 Who’s got time for that?!
My husband requested the Chicken & Bacon Club Melt, while I thought the Cheese & Pepperoni Pizza Melt sounded amazing. You pop them in for 22 minutes at 375°F and wait for the magic to happen. The cheese melts, the meat heats, the bread toasts to the perfect mixture of soft but crunchy… Mmmmmmm!! I’m making myself hungry again.

They made for such an awesome dinner, especially in a time crunch. And I thought that I’d want more than one melt but it was perfectly filling – not too much and not too little.
