It’s hard to believe it’s been three weeks since I went into labor with my baby girl. Time has flown by, and at this point we are basically just in survival mode! But I wanted to take a minute and post about the new addition to our little family.
It was 6:00 in the morning and I was laying in bed, 35 weeks pregnant, getting ready to get up and go to work when all of a sudden I felt a ‘Pop!’ and I thought to myself, was that what I thought it was? And before a second could pass, I got the answer to my question – my water had broke. I dashed into the bathroom and stood in the bath tub, unsure where to go from there. After a few minutes, I woke up my husband and said, “Um, hun? My water just broke.” His eyes shot open from a deep sleep as he said, “Seriously?”
From there it was a whirlwind as we quickly took our showers, grabbed our pre-packed hospital bags, and timed my contractions. My husband ran around frantically grabbing random things he thought I might need while laboring at the hospital and shuffled through our birthing class papers for instructions on what to do.
After about an hour, we headed to the hospital as contractions were about 5 minutes apart and getting stronger. The thought crossed my mind, ‘I wonder if we have time to stop at Starbucks’ but then the thought passed as a strong contraction came on and I had to breathe my way through as we sat in morning commuter traffic…
Eventually we got to the hospital around 8:00AM and got checked in, got the monitors all hooked up and the doctor finally came in around 9:00AM, ran a quick ultrasound and found that the baby was breech. She asked if I knew what that would mean, and I answered that I knew what I didn’t want it to mean. The prep for an emergency C-Section was then scheduled for 9:45AM.
After the doctor had left the room, in walked my mom who also works at the hospital. She’d gotten the okay to come into the surgery with me and my husband and thank goodness, because I was so anxious!
It was cold, and very intimidating as we walked into the operating room. I was beyond nervous thinking about how I would be completely awake through a major surgery where they would be cutting me open. But before I knew it, they were numbing me up and we were beginning the process. It wasn’t long before I heard a high pitched cry and up above the curtain came a beautiful, unhappy baby girl. Cue the tears, I sobbed. After a swift kiss to the forehead, they took her off to get weighed and measured. She was 5 pounds 14 ounces, and was considered a ‘late preemie’.
She ended up having to spend a couple days in the NICU because she was early and small. They hooked her up to little monitors and a heat light, and she had to stay in there 24/7 which killed me. Especially since, after a c-section, I was essentially immobile for a while and unable to go see her until later that night when I decided regardless of pain, I was going to go see her.
The next few days flew by as every couple hours, my husband would gently hoist me out of bed and into a wheelchair (which was so much more of a painful process than it actually sounds), and then head down to the NICU to feed baby girl. We were both discharged 4 days later, where we would go from not sleeping at the hospital to not sleeping at home!
Our Life Since
As I mentioned before, the following weeks have flown by. It seems like the day is now just measured by ‘What time did she eat last?’ and ‘When does she need to eat next?’ We have to wake her every 3 hours to feed still, so it’s a matter of changing, feeding, pumping, and repeat. But she is doing great and growing quickly!
Well that is all I have time for right now! I will try and post more frequently as things settle down here But I can’t guarantee anything!

My husband and I are huge breakfast people. We love going out and having a nice bite to eat with some coffee and just get a good start to the morning together. This weekend, we got to try out the new breakfast menu at CRAVE West End (in St. Louis Park, Minnesota).
Kaskaid Hospitality (the parent company of CRAVE West End, UNION Rooftop and Salsa a la Salsa Uptown) recently launched a new breakfast and brunch program at select restaurants throughout the Twin Cities.
In case one sounds better to you than another (or one is just closer to you than another… that is usually our deciding factor) here are the offerings and details of the different restaurants:
They have breakfast and brunch with dining available on Saturdays and Sundays from 8am to 2pm. Some of the delicious options on the menu include Red Velvet Pancakes, S’mores Waffles, Crab & Shrimp Cake Benedict (um, yum!!!), Braised Short Rib Hash, and some amazing gourmet donut holes which we just had to sample as a breakfast appetizer. They were Ahhhhh-mazing and came with a size of Nutella dip which brought me back to my trip to Italy last year. These were divine, I wish I could have them made for me every single morning!
I could not make up my mind between the Strawberry Cheesecake Stuffed French Toast or the Eggs Benedict… Ultimately, I went with the Eggs Benedict which was a delicious choice, though I have a feeling they both would have been. I am a little fussy so I asked for the eggs scrambled and the hollandaise sauce on the side – I know, I know… high maintenance.
My husband went with his unadventurous usual, which involves eggs, sausage, toast and hashbrowns. On the menu, it was called the CRAVE American breakfast and he was everything short of licking the plate he enjoyed it that much. And I don’t blame him, I may have snuck a bite or two – for review purposes of course.
The food was beyond scrumptious, and the prices here were really reasonable too! I was impressed when our total came to around $30 for two entrees, coffee and the ‘appetizer’ of donut holes. With the food aside, we also had a great waitress who was super helpful in helping us decide what we’d like best on the menu and she also gave us the run-down of her favorites which included the breakfast quesadillas and the banana pancakes. As we were leaving, I had to snag a picture of the outdoor patio. It was early (and a little chilly) when we were there so it wasn’t too busy yet, but it is so nice to find a cozy patio like this for summer evenings or afternoons. You can find CRAVE on Twitter, just search for @CRAVEAmerica!
This second option for breakfast or brunch is located downtown Minneapolis and they serve breakfast on Sundays from 8am to 2pm. Their menu has delicious options like Portobello Benedict, Mascarpone Stuffed French Toast and of course their signature hash browns. Oh, and did I mention part of their breakfast also features bottomless mimosas? If I weren’t 9 months pregnant, this probably would have swayed me to go downtown and try UNION instead of CRAVE but you know, details…

Well the name kind of gives it away, but this third restaurant is located in, you guessed it, Uptown. They serve their new brunch menu on Saturdays and Sundays from 10am to 3pm. Highlights from their brunch menu include authentic Mexican dishes such as Chilaquiles, Southwestern Omelets, Huevos con Chorizo, and to wet your palette, a Bloody Maria (bet you can’t guess what that might be!) Yes, you’re right, it’s a bloody mary.

This month’s (April 2015) Glossybox was possibly the cutest box yet! I have been trying to stock up on all the essentials lately before baby comes. They tell me it could be any day now which is crazy to think about!! As many of you know, I’m currently 8 months pregnant which seems to equate to me constantly being hungry, and at the same time – constantly being tired. Luckily, when I’m out running errands I can stop into my local Circle K and pick up a yummy snack from SNICKERS® which gives me the little boost that I need to get through my afternoon.
So who am I when I’m hungry? I’m a tired, crabby pregnant lady who wants to do nothing but sleep on the couch all day!

Recently, I was able to get my hands on this awesome gadget that is brand new to Babies “R” Us! It’s called the Snuza Hero and it is a portable baby movement monitor. You’ve probably never seen anything like this before so of course I am going to explain what it is and why moms are loving it!
Where does the Snuza Hero go?
This little movement monitor clips onto the front of your baby’s diaper and ensures peace of mind while they are sleeping by tracking baby’s regular abdominal movements (breathing).
What does it do?
The Hero detects if your baby’s movements are very weak or fall under 8 movements a minute. If no movement is detected for 15 seconds, the gadget will vibrate gently which is often enough to rouse the baby and Hero will go back to monitoring. After three separate vibrating sessions, a “Rouse Warning” will alert Mom to let her know that this has happened. If movement is still not detected for an additional 5 seconds, an alarm will sound to warn you.
What does that mean for me?
Moms are notorious for worrying, aren’t we? We worry about things that we can’t explain. But with the Snuza Hero, you can get a little peace of mind knowing that if you’re not hearing any alarms coming from the nursery, then your baby is sleeping safe and sound along with breathing regularly and peacefully.

Weeknights are so busy for us lately, and usually by the time dinner time comes around, I’m looking for the easiest possible dinner that I can throw together. Recently when I was picking up a few groceries at Walmart, I found these Campbell’s Soups for Easy Cooking and thought I’d give one a try. I picked up their Creamy Herb & Garlic as I had a feeling it’d be a great way to make a chicken casserole.
Campbell’s four flavors include:
- Savory Portobello Mushroom
- Creamy Herb & Garlic
- Sweet Onion
- Mexican Style Tomato
With this range and variety of flavors, it gives you a broad range of recipes that you can create simply and quickly.
Now, like I said, weeknights have been so busy at our house so anything that makes my life easier is much welcomed! The thing I liked about these Campbell’s Soups for Easy Cooking was that it already had the stock that I needed, plus the majority of the seasoning as well so all I would have to do is mix it into my dish. So nice!
To test it out, I gave it the 30 minute cooking test. I put together a delicious chicken and potato casserole that would require minimal time or effort, but would still manage to be yummy for everyone! It turned out awesome so I will share the recipe with you in case you need a quick and easy weeknight dinner for the family someday!
Quick & Easy Chicken and Potato Casserole Recipe
To create this savory casserole at home for your family, follow the simple recipe below! First, let’s take a look at the few ingredients that you’ll need for this casserole.
- 3 chicken breasts
- 4 medium potatoes
- 1/2 cup sliced carrots
- 1/2 cup milk
- 1 carton Campbell’s Soups for Easy Cooking (in Creamy Herb & Garlic)
- salt, pepper, thyme and/or garlic to taste
- Preheat oven to 425° F.
- Wash and peel your potatoes and slice into small cubes. Place in your baking dish.
- Cut each chicken breast into 8 pieces, or more depending on how small you’d like the chicken bites to be and add to the potatoes in the baking dish.
- Top the chicken and potatoes with carrot slices, then pour in the Campbell’s Creamy Herb & Garlic carton, along with the milk.
- Mix until everything is thoroughly coated with the wet ingredients.
- Sprinkle salt, pepper, thyme and garlic on top. This step is optional, I just think it gave it a little extra flavor boost!
- Top your baking dish off with your lid and place in the oven to bake for 30 minutes. Before serving, ensure that the chicken is thoroughly cooked along with the potatoes.
- Serve with dinner rolls or bread for a delicious and simple weeknight dinner everyone will love!

I’ll let you use it too though, as I’m pretty sure you’ll fall in love with making quick meals throughout the week. It’s easy to incorporate these soups into your typical recipes. Here’s how.

- Cream of Mushroom –> Use the Savory Portobello Mushroom (Tip: Works especially well in skillet recipes)
- Cream of Chicken –> Use Creamy Herb & Garlic with Chicken Stock (Tip: Works awesome in pot pies)
- Condensed French Onion Soup –> Use Sweet Onion (Tip: Works great in meatloaf and skillet dishes)
- Condensed Tomato Soup –> Use Mexican Style Tomato (Tip: Works fabulous in Mexican recipes)

I’ve done the obligatory maternity shopping lately, and I really do not enjoy it one bit. The only way I’ve found that I’ve enjoyed it is when I’m shopping for it online! I was browsing for baby shower dresses when I came across Seraphine. They sell stylish maternity clothes (from casual to dressy) that are actually cute!
The above image is me wearing the Seraphine Green Knot Front Maternity Dress. It’s made of thick but lightweight, stretchy material. I emphasize these two things because it is comfortable, while at the same time it isn’t sheer and it doesn’t show every little thing which I think I can safely say is nice these days.
Plus, I didn’t know this until afterwards, but the v-neck in the front is designed to be easy for nursing. I love that, because as the style is anyways, it will still be a dress I can wear even after pregnancy. No one will know that it’s a maternity dress!
On their website, they have a huge lineup of adorable dresses that make any pregnant woman look cute. They’ve got some really cute maxis that I was eyeing up as well, and with spring coming up those would be so perfect too!
But they also have much more than dresses, they have adorable casual wear too. Everything from leggings to jeans, tops to sweaters, swimwear and even workwear – there is something cute for any occasion.
I especially love their Bump Kit as well. It’s like having all the bases covered and then you can layer on anything else you need! Add a sweater, a top, a scarf, whatever it is that fits your mood. Such a good idea!
